Latkes are a traditional food eated during the Jewish celebration of Hanukkah.
6 medium potatoes
1 t. salt
3 T. flour
1/2 t. baking powder
Grate the potatoes and onion and set in a colander to drain. Add remaining ingredients and mix well. Heat oil in skillet. Fry on each side till brown and crispy. Drain on paper towels. Yield: 20
These were excellent. Basically, they’re just hashbrowns. Traditionally served with sour cream or applesause, we preferred ketchup.
